As early as 1440 the Duke of Urbino, Federico II da Montefeltro spent long periods dedicated to resting and hunting in his summer residence in Casteldurante.
Deers, roes and wild boars were sought preys. In the course of time, in our mountains only deers and wild boars have found a favorable environment.
Unfortunately, the current wild boars do not belong anymore to the native kind but remains nevertheless a great passion for this type of hunting. The young wild boars are cooked as you cook the pork, the olders' flahes instead need to be made tender and marinaded for mitigate the smell of wild.
