Crostolo is an ancient cooking that unites all villages in the hollow. People used it as a sobstitute of bread and sometimes of companatico.
Vaguely it reminds the piadina romagnola, but its preparation and its flavour are quite peculiar, in fact you can find it only in our land. It's a winter recipe, because Crostolo was mixed with the lard of pork and then cooked on the grill in the fireplace.
An other version of Crostolo is prepared with mized flour, very tasty. In both of these versions, Crostolo is very good eaten warm, with cooked vegetables, cheeses and mixed cold cuts.
